So We’re Doing Survivalism in Cooking Shows Now

“Chefs vs. Wild” throws chefs in the wilderness, asking them to source enough wild ingredients to create a fine dining meal

Right now, cooking competition shows feel like they’re in the midst of an arms race of absurdity. Each new show attempts to make the process of cooking even more challenging in its own unique way, like the switcheroo kitchens in Gordon Ramsay’s Next Level Chef, or the trompe l’oeil trickery of Is It Cake? But forthcoming series Chefs vs. Wild ups the ante significantly, challenging its contestants to hunt, fish, forage, and cook, all in the middle of nowhere.

In each episode of Chefs vs. Wild, produced by David Chang in conjunction with Vox Media Studios, two contestants will be helicoptered into remote locations where they’ll be tasked with sourcing enough wild ingredients to create a fine dining meal. (Vox Media Studios is part of Eater’s … Read more

R-CALF sees MCOOL opening for beef because of new EV origin requirments

Any resurrection requires at least a little faith.

Nobody has more confidence than R-CALF’s CEO Bill Bullard for the return of mandatory county of origin labeling, or MCOOL, for meat.

MCOOL is popular with many consumers and America’s livestock producers.

Congress repealed MCOOL in 2015 after the World Trade Organization (WTO) ruled it harmed Canada and Mexico as a non-tariff trade barrier that would cost the United States billions of dollars.

Bullard sees the recent adoption of the Inflaton Reduction Act as a “seismic shift.” He says it moves Congres from “submissive adherence” to a WTO-enforced national trade obligation to the same advantages for imported products as for domestic products.”

According to some bipartisan economic models, the Inflation Reduction Act won’t reduce prices.

Bullard likes the act’s language that requires a $7,500 tax credit for importing “Made in China” electric cars that will only be extended to electric vehicles where … Read more

Though a Chipotle in Augusta, Maine filed for a union election in June, the chain closed the location a few weeks later

The growing wave of food service industry unionization efforts across the country continues: Workers at a Chipotle location in Lansing, Michigan voted to unionize last week, establishing the first union in the store’s 3,000 locations, according to a press release from the International Brotherhood of Teamsters.

Motivating unionization efforts at this location are low wages, too few hours, and tasks “outside their normal responsibilities,” according to the Washington Post, with some workers at the location earning $13 an hour. (While the minimum wage in Michigan is currently $9.87, $15.65 is considered a living wage for a single adult with no children in Lansing, according to the Living Wage Calculator.)

“In addition to the security of a powerful Teamster contract, workers are forming a union … Read more
